ELMHURST – Elmhurst Memorial Healthcare (EMHC) recently learned that it is a finalist in the National Society for Healthcare Foodservice Management's (HFM) 5th annual Culinary Competition.
EMHC Executive Chef Jim Roth and Director of Food, Nutrition and Laundry Services Dave Reeves will participate in a live cooking competition at HFM's Annual Leadership Conference in August. The competition, which is sponsored by Tyson Food Service, will feature five finalists preparing an original, creative recipe using the featured product: 5 oz. IBP Flat Iron Everyday Steaks. Chefs will also be asked to add side dishes and sauces to balance the plate.
Roth's entry for the competition is a grilled mediterranean flat-iron steak with metaxa au jus and saffron-infused quinoa.
"We are trying to change the way that hospital food is perceived," Reeves said. "We are using fresher products and preparing food in more of a restaurant style. Being named a finalist in this competition is a good indication of the progress that we have made."
